Beyond brand, fuel source, or tech features, *capacity*\u2014the size of coffee batches a roaster can handle\u2014is a foundational choice that can shape your workflow, flexibility, and business growth.<\/p>\n\n\n\n<p>In this article, we\u2019ll break down why roasting machines come in different capacities, look at the most common sizes available today for specialty coffee roasters, and discuss how each size plays a role in the coffee world \u2014 from R&amp;D to production.<\/p>\n\n\n\n<p>Finally, we\u2019ll zoom in on the increasingly popular \u201c3kg roaster\u201d and explore why this capacity has become such a sweet spot in the era of specialty coffee and micro-lots (and why so many new and emerging roasting machine manufacturers are starting to focus on producing machines with this kind of capacity).&nbsp;&nbsp;&nbsp;<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h1 class=\"wp-block-heading\">1. Category: capacity and price<\/h1>\n\n\n\n<p>When we look at the popular names on the roasting machine market today such as Stronghold, Giesen, Probat, ROEST, Aillio\u2026etc., we can see that the popular and\/or <strong>specialty coffee focused models<\/strong> from these roasting manufacturers tend to fall into certain tiers of \u201croast capacity categories\u201d, each widely adopted for certain roles:&nbsp;&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Sample Roasters (50g\u2013200g per batch) \u2192 For quality control, sourcing, and experimentation.&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>1kg Roasters \u2192 For training, recipe development, and ultra-small-batch retail.&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>5\u20136kg Roasters \u2192 For small businesses ramping up production.&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li>12\u201315kg Roasters \u2192 For roasteries with wholesale volume or multiple cafe outlets.&nbsp;&nbsp;<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>3kg Roasters \u2192 For cafes, microroasteries, and specialty projects. Current popular models under this category usually has batch size ranging from 2.5\u20134kg.<\/strong><\/li>\n<\/ul>\n\n\n\n<p>Each size is chosen depending on the needs of the business stage, scalability, and how much emphasis is placed on experiment vs. production.&nbsp;&nbsp;<\/p>\n\n\n\n<p><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">1.1. Sample Roasters&nbsp;&nbsp;<\/h2>\n\n\n\n<p>Often handling batches as small as 50g, sample roasters are the industry\u2019s \u201ctest kitchens\u201d.&nbsp;<\/p>\n\n\n\n<p>They\u2019re not about producing coffee for sale but about evaluation:&nbsp;&nbsp;<\/p>\n\n\n\n<p>&#8211; Importers, producers, and buyers use them to cup small lots or green coffee samples that is shipped in very small quantities (50~200g bags).<\/p>\n\n\n\n<p>&#8211; Roasters use them to trial roast profiles or learn about this new coffee on hand before scaling.&nbsp;&nbsp;<\/p>\n\n\n\n<p>Their strength? Think of them as \u201cstep-one professional machines\u201d. In this sense, when searching for a 1kg roasting machine, many will put the \u201cresell value\u201d of a machine near the top of their priority list.<\/p>\n\n\n\n<p>However, changes in the traditional coffee roasting workflow might alter your opinion regarding the \u201cproduction efficiency\u201d of a 1kg coffee roaster.<\/p>\n\n\n\n<p>Take the popular Aillio Bullet R1 roaster as an example.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1024\" height=\"701\" src=\"https:\/\/rubasseroasters.com\/wp-content\/uploads\/2026\/01\/scimgHV5rcr.webp\" alt=\"Aillio Bullets Parallel Production\" class=\"wp-image-3970\"\/><\/figure>\n\n\n\n<p>Photo excerpted from Aillio website.<\/p>\n\n\n\n<p><\/p>\n\n\n\n<p>Some Cafes started out roasting on one single Aillio Bullet R1, and as demand grew, instead of switching to larger roasting machines, they simply buy another (or even several other) Bullet R1(s) to accommodate for the growing roast capacity needs.<br><br>Key points that make this idea viable are \u201csharable roast profiles across different machines of the same model\u201d and \u201cease of roasting (hence one roast master can look after several machines at the same time)\u201d.&nbsp;<\/p>\n\n\n\n<p>Although the lack of a better silver skin collection system makes the process a bit more difficult than necessary, the idea of:<\/p>\n\n\n\n<ol class=\"wp-block-list\">\n<li>Not having to redesign profiles from ground zero on a new machine<\/li>\n\n\n\n<li>Having some production &#8220;redundancy&#8221; in case of an unfortunate roasting machine breakdown<\/li>\n\n\n\n<li>Lower error costs per roast<\/li>\n<\/ol>\n\n\n\n<p>actually made this concept more and more acceptable by the upcoming, roast-quality focused roasters (more on this topic in the &#8220;<a href=\"https:\/\/docs.google.com\/document\/d\/1UeU-PZdCgEd7XqoKYuY81-DoR35soFHzTEtj8KiJB94\/edit?tab=t.0#heading=h.rdtto3jcow7d\" target=\"_blank\" rel=\"noopener\">Parallel Production<\/a>\u201d section of this article).<\/p>\n\n\n\n<p>Additional information: As a fun fact, the popular Loring roasting machine also once put out test roasters having capacity around 1kg (although the machine never made it to true production, and as far as we know, only 3 of these roasters are currently in use; Once demand grows, the batch size ceiling can become restrictive, pushing a roaster toward 12\u201315kg or larger capacities.<\/p>\n\n\n\n<p>Interestingly, manufacturers themselves have recognized how critical this range is for specialty coffee businesses.&nbsp;<\/p>\n\n\n\n<p>Loring, for example, first built its reputation on larger-capacity roasters (15kg, 35kg and beyond), but responded to market shifts by launching the S7 Nighthawk 7kg model in 2018. This compact roaster was specifically designed for artisan and specialty-focused operations.
